Glazed turnips
Recipe by Nir Zuk, "Nir Zuk complex" Jaffa
The delicate bitterness of the turnip is wrapped in the sweetness of the glaze, and the result is a refined dish and just wonderful. If you are trying to recover a turnip-trauma of any of your loved ones, select this dish.
Ingredients (for 1-2 servings):
2 tablespoons canola oil
4 small-medium turnips, peeled and sliced to 6 segments
2 tablespoons of sugar
1/4 cup white wine
1/4 cup water
Salt
Coarsely ground black pepper
Preparation:
Heat oil in a small saucepan over high heat, add turnips and sugar and fry for about a minute, stirring randomly, until the sugar dissolves.
Add white wine and bring to a boil. Continue to cook on medium-high flame, to reduce the amount of liquids by half.
Add water, salt and pepper. Cover the pan and reduce the heat. Cook for 15 minutes and remove from heat when the turnips are still slightly crisp. Serve hot.
