sweet potato and New Zealand patties

sweet potato and New Zealand patties, which the children ate happily.

The recipe:

3 sweet potatoes baked in their skins

A bundle of teragon, leaves only

Half a cup of legume flour (lentils, chickpeas or a combination)

Salt to taste

Sautee the tetragon in a pan with a thick bottom, over medium heat with a little water. If the leaves dry out and stick to the pan, add a little water.

Mash the sweet potatoes

Chop the leaves

Mix all the ingredients and form into little patties

Fry in Picholine olive oil or grape seed oil, or bake at medium heat.
