Just for Pecan Pie lovers

Do you love Pecan Pie?

Pecan nuts have the aroma of winter. A friend told me that she discovered the pecan trees for the first time when she went vacationing up north, here in Israel. Between the cute little guest houses, on the porch, in the serenity of  twilight (she admitted that it was before the children were born) when she rocked in the colorful hammock and practiced really hard not to think of anything, her gaze fell on a little nut lying on the parquet floor below her. Small, brown and elliptical, like a small brown egg – It was, of course, a pecan nut. Just like Ami and Tammys crumb trail, not far from this nut lay another one, and next to him it another, and next to it was a bowl full of them. A slightly more thorough view revealed that the guest house was surrounded by these trees, or rather – stood at the edge of a small grove of tall trees, full of green foliage and pecan nuts. She spent the rest of the vacation with her gaze fixed to the ground, and hands full of cracking pecans, of course.

The pecan tree is an impressive tree – tall, mature and abundant. On average, the pecan tree reaches 25-40 meters, and may live up to 300 years. The pecans are cooperative – in order to pollinate, two trees are needed, because the flowers are not suitable for self-pollination. The pecan likes water – in one week it gulps dozens of liters, which it needs, apparently, for its fast growth rate. From the moment it reaches its peak height and glory it can serve as a source of shading to other trees, when it rises (in the good sense) above them.

The pecan shell is a wonderful example of nature's timing: the inner shell is brown, but the exterior husk is green. It is made of 4 connected parts containing a substance that protects the nut from pests: tannic acid. When the pecan's time comes to ripen, the husk opens, and the pecan, which is also the seed, is carried by the wind to its new residence.

Nature has bestowed the organic pecan on much good: these nuts contain nice amounts of calcium, potassium, magnesium, selenium, zinc and manganese. Your Immune System will thank you for regular and moderate consumption of pecans, which is about one and a half handfuls of nuts per day. This amount is also good for maintaining the health of the heart and blood vessels, and the digestive system will benefit from this arrangement too. It is recommended to remember that they contain a good content of fats and calories (about 730 calories per 100 gram of pecans).

So what do we do with organic pecans? What not! You can combine them in salads, you can combine them in bread, cookies, and of course the classic – pecan pie. Nice recipes I found here: https://www.ynet.co.il/articles/0,7340,L-3351956,00.html
