If you've managed to ignore the Passover craziness, and the weather that generally suffers from a personality and midlife crisis combined, including unexpected rain that came just when everyone has finished cleaning, then I am happy to notify you that spring has indeed arrived. The Passover holiday has passed and is behind us, which means that Independence Day is coming soon and with it, of course, come the symbols of the holiday: Just as Rosh Hashanah is celebrated with fish, pomegranates and apples in honey; Purim with Oznei Haman; and Passover with matzos, Independence Day is celebrated with barbecues and fans to blow the smoke and our troubles and enemies away.

Organic fruits and vegetables on the barbecue?
The stricter people will get up early and direct their waze app to the most desirable parks, most beautiful beaches (hopefully they have already been cleaned up after the Passover mess), and the nature reserves with the coolest streams. Those who get up late can make do with traffic jams, and those who miss the train altogether can place their grill on the nearby traffic island, otherwise they will not have time to start the coals. As soon as the coals are burning, the celebration begins… each and every one has his own favorite food: some prefer meat, and some put organic vegetables on skewers and even organic fruits – creating a wonderful, tasty and healthy meal that "sits" well in the stomach.
How to prepare delicious food from organic vegetable on the barbecue?
Compared with meats that sometimes require complex preparation, organic vegetables are surprisingly easy to prepare. Simply put them on the grill, or skewer them some of them can be thrown straight into the fire (like potatoes, sweet potatoes, onions, squash, etc).
There are wonderful classic combinations that are delicious and also very photogenic: mushrooms-baby peppers-cherry tomatoes, or eggplant- zucchini- tomatoes-sweet peppers for a roasted vegetable salad (great with some herbs and vinegar). Most vegetables are also excellent on their own – like corn (soon to come), moist garlic!!! (ow there is lots of it) sweet potatoes, various squash, potatoes. They can be wrapped in foil alone or with a sauce of olive oil, garlic, spices, herbs. Either way, the taste of the fire adds enough to make them a delicacy!
And what about organic fruits?
It turns out that the organic banana is a well-known barbecue hit. Just place it as it is, with the peel, and flip once the peel becomes darker. It's really sweet and tasty and you can add a few drops of Silan – and you have the perfect alternative to marshmallows.

The secret side dish – organic moist garlic
One of the organic vegetables that unequivocally symbolize the coming of spring is the moist garlic, which comes with its leaves (and also the organic bean called in Arabic Ful, but we'll talk about this another time). The moist garlic is aromatic, delicate and is generally a great addition to many dishes – soups, salads, fish, cheeses . From our experience of previous years, we never have enough garlic to save enough for everyone for the rest of the year. So I recommend doing what I do – buy in advance 15 -20 kg, and hang them at the doorway of the house. That way you have excellent organic garlic, and also avoid harmful pests and vampires while doing so (I think this decoration is much nicer than wind chimes at the entrance).
The moist garlic is also excellent on the grill. Just place it on the grating of the grill and then it turn over when it is done on one side, then allow it to rest a short while on the grill when it is no longer so hot. Open the top and squish the soft and easily peeled cloves into a puree. You get a small side dish that is so tasty that it may be a reason for a fight. Those who managed not to be filled with salads and pita until that moment will be the lucky ones!
