The main ingredient in our Latkes are potatoes, which were discovered by Colombus in America. This was long after the Maccabees …. In the days of the Maccabees, who were likely farmers, they could celebrate by eating lentil pancakes (best when sprouted, of course).
As befits the wet green weather, leaves must have been used as well and I highly recommend to integrate them into Latkes.
In honor of Hanukkah, Latkes of different typesץ. Remember: best to fry in coconut oil !!!
